[研究室の概要（学生向け）]

食品には、栄養やおいしさ、生体調節に関わる機能成分が含まれています。
食品機能学研究室では、糖との相互作用によるアミノ酸の変化や、
ビタミンCや脂肪酸の変化について研究し、
生成する成分の構造と生成メカニズムを実験機器を用いて解明しています。

入室希望の学生の方は、研究室を決める際、見学に来て下さい。
